Apple Shine Carrot Side


  • 1-1/2 cups roughly diced carrots

  • 1 sweet onion roughly chopped

  • 1-1/2 cups roughly diced parsnips

  • 2 cups water (add more as needed)

  • 4 tablespoons Kitty Walton’s Apple Pie Moonshine

  • ¼ cup packed brown sugar

  • 1 tablespoon lemon juice

  • 1 cup diced apple

  • 1 tablespoon cornstarch

  • 2 tablespoons Kitty Walton’s Apple Pie Moonshine



  • In a saucepan, cook carrots and parsnips in water until crisp-tender; drain.

  • Add onion, Kitty Walton’s Apple Pie Moonshine, brown sugar, lemon juice and cinnamon; mix well. Stir in apple.

  • Cover and simmer for 10 minutes, stirring occasionally.

  • Combine cornstarch and Kitty Walton’s Apple Pie Moonshine; stir into carrot mixture.

  • Bring to a boil; cook and stir for 1 minute or until thickened.

  • Simmer, uncovered, for 2 minutes or until glazed, stirring constantly.
